Behind the Chef’s Table: Interview with Justin Foo

His Journey as a Chef

Having led teams operationally in both food and media industries, Chef Justin Foo is a name that’s no stranger to fellow industry professionals, business owners, and the media industry.

His career in the culinary industry started at an early age of 16, a few years before he decided to hone his cooking skills professionally at Le Cordon Bleu – a world-renowned culinary art institution. This was in 2010, and was the start of a journey that ignited his love for French cuisine.

By the age of 24, Justin was made the head chef of the Italian fine-dining restaurant, Senso Ristorante and Bar, for 3 years. He then moved on as the Director of Food & Beverage for Sodexo Singapore.
 


In 2017, Justin established his own restaurant, Provision Gastrobar – Singapore’s first Claypot & Skewer Bar – in Dempsey Hill, serving up soul food paired with bespoke Asian inspired cocktails. The restaurant embodies a concept built on retro vibes from the agogo days of Singapore. “Everyone who came ordered my Oyster Omelette Claypot Rice.”, said Justin Foo. It was a dish that got him more recognition from the public.

In the same year, Justin began creating content for the screen, focusing on producing videos and events, that take advantage of his unique position as both a chef and content producer.
 


Throughout his fourteen years of experience, Justin constantly seeks creative inspiration through the food he sees on films and anime. To him, making a special meal requires a form of storytelling, and seeing food on the screens helps him better understand how diners approach different types of food.

Behind his successes lie courage and perseverance throughout the process of crafting. And with each recipe botched comes a better version of Justin.
 


For an industry veteran who has tried countless exquisite cuisines, you’ll be amazed that the one dish which truly holds a special meaning in Justin’s heart is a humble bowl of Bar Chor Mee. This local dish that he grew up eating taught him how just a simple tweak in sauces can have a great impact on flavours – from savoury and sour, to spicy, umami, and sweetness.
 


While the current travel restrictions pose a challenge for Justin to experience new flavours across borders, being in his homeland in turn gave him more time and resources – which he appreciates – to explore more Japanese, French, and other international cuisines that he can experience in the food paradise of Singapore.
