Kickstart your gastronomic adventure with a delicate Poached Pear Tart. The main ingredient of this dish is naturally the pear, which is currently in season. The tartness of the pear is mellowed by the process of poaching, creating an almost silky texture that complements the buttery consistency of the puff pastry.

Sounds delicious? Here’s what you’ll need to make the dessert:

Ingredients

Red Wine Poached Pear

  • 1 Pear
  • 100g Red Wine
  • 40g Sugar
  • 2tsp Lemon Juice
  • 1 Cinnamon Stick
  • 20g Roasted Walnuts

Almond Tart

  • 1pc Frozen Puff Sheet
  • 40g Butter
  • Pinch of Salt
  • 40g Sugar
  • 40g Egg
  • 40g Ground Almond Powder

Decoration

  • 4pcs Chervil Leaves
     

Equipment

  • 1 Ring Cutter (Size 12)
  • 4 Tart Moulds (4.5-inch)
  • 1 Mixing Bowl
  • 1 Knife
  • 1 Chopping Board
  • 2 Spatulas
  • 1 Pot
  • 1 Electric Oven

Once you’ve got everything ready, you can start preparing and making the Poached Pear Tart!
 

Preparation

  1. Preheat oven
  2. Soften butter at room temperature
  3. Prepare baking paper for drop lid
  4. Roast walnuts at 180℃ for 8 minutes
     

Directions

Red Wine Poached Pear

  1. Place the red wine, sugar, and cinnamon stick into a pot
  2. Cut the pears into cubes (approximately 20 to 24 pieces)
  3. Place the pear cubes into the pot; mix everything well, and bring to a boil
  4. Bring to a simmer, and cover with drop lid* (If you do not wish to prepare a drop lid, you may cover the pan slightly with a lid.)
  5. Cook for 13 to 15 minutes
  6. Once the pears have fully absorbed the mixture, bring the temperature back to high heat, and reduce the liquid until almost dry
  7. Add in lemon juice, as well as crushed roasted walnuts
  8. Strain the liquid, and remove the pears

Almond Tart

  1. Use a cutter to cut out 4 pieces of puff sheets
  2. Line the tart moulds with these cut puff sheets
  3. Put softened butter and sugar into a bowl, and mix well
  4. Add in eggs, and mix well
  5. Add in ground almond powder, and mix well
  6. Divide the almond cream equally into the 4 tart moulds
  7. Bake at 200℃ for 18 to 25 minutes

You’re almost there! One last step to go:
 

Assembly

  1. Remove the baked tarts from the tart moulds, and allow to cool
  2. Place the strained poached pears onto the cooled tarts (approximately 5 to 6 pieces per tart)
  3. Garnish with some chervil leaves

… and voila! Dessert is served.
